This necessitates robust surveillance, monitoring, and sanitary control systems to manage risks associated with their production and consumption.

To address these challenges, the FAO Regional Office for Latin America and the Caribbean hosted the webinar “Food Safety in Bivalve Molluscs.” This technical forum strengthened regional capacities and facilitated experience exchange on critical food safety issues, covering marine biotoxin monitoring, mollusc health programs, technical tools, and risk management approaches.
